HLCL Video Blog: Episode 2 - Snacks!

Hey everyone! We finally have the 2nd video blog done. This still didn't turn out the way I'd hoped it would (phone rang, etc.), but it will have to do. Below the video I have some recipes for ya! :0)






Deviled Eggs
Makes 12 servings

6 eggs
3 tbsp Real Mayo
1 tsp Yellow Mustard
1 tsp Red Wine Vinegar
Salt and Pepper to taste

Place 6 eggs in a pan with water - enough to cover them. Bring to boil over high heat. Reduce heat to simmering. Cook 15 minutes. Drain and add cold water to pan. Let stand 2 minutes, then peel.

Cut eggs in half an scoop out yolks. In a bowl mash yolks up, then add mayo, mustard, vinegar, salt and pepper. Mix well. Scoop yolk mix into pastry bag with large tip and squeeze yolks into egg cavity. If you don't have a pastry bag you can just use a spoon to fill the egg whites. Sprinkle with paprika if desired. Cover and refridgerate.

Nutrition info: Perserving - 61 calories, 106 cholesterol, 55 mg sodium, 5.3 g fat, 0.3 carbs, 0 fiber, 3.1 protein.


Spinach-Artichoke Dip
Serves 8

1 box frozen chopped spinach (thawed and well drained)
1 cup real mayo
1 cup parmesean cheese
2 cloves garlic, minced
1 can artichoke hearts (diced)

Mix all together and place in pyrex baking dish sprayed with non-stick spray.
Bake at 325F for 25 minutes (will be melted and bubbly).
Serve with pork rinds, veggies, or low-carb tortilla chips.

Nutrition info: Per serving - 257 calories, 26 g fat, 6 g protein, 3 carb, 2 fiber, 17 mg cholesterol, 367 mg sodium.

Hey Amy, your video about low-carb snack ideas was SUPERB (and the intro muzik was COOL)! I love sugar-free Jello and pudding, string cheese (mozzarella!), raw almonds and lightly-salted cashews, pepperoni wraps are yummy, Enchantments are yummy but I don't like the maltitol in them, and of course EGGS! WOO HOO! You're doing great, so keep 'em coming! Gotta try some of that spinach dip! :D

Thanks Jimmy! I'm not crazy about the maltitol in the Enchanments either, but it's a small enough amount I let the kiddos have them now and then. Let me know how you like the spinach dip. :0)
